English Muffin Breakfast Bake
This make-ahead breakfast bake is perfect for holiday mornings, house guests, or pot lucks. A friend/co-worker’s mom used to treat us to a dish similar to this for morning potluck meetings and I instantly fell in love with it. Breakfast bakes can be a little problematic at times because without a good binder, they can turn out runny. This one calls for English muffins to bind the eggs instead of bread which gives it great flavor, perfect texture and has everyone asking…”What is that in there?! It’s soooo good!”
Ingredients
- 10 fully cooked sausage links, thawed and sliced
- 12 eggs
- 1 tsp. salt
- ½ tsp. pepper
- 2 c. whole milk
- ½ onion, diced
- ½ red bell pepper, diced
- ¼ c. unsalted butter, melted
- 1 additional tbsp. unsalted butter, softened
- 2 ¼ c. freshly grated cheddar cheese (Buy a block and shred it on a box shredder or use a food processor with a shredding attachment. Freshly grated cheese makes for better melting, texture, and flavor)
- 6 English muffins, cubed
- chopped fresh chives, for topping
Instructions
*This dish is prepped the night prior and baked the next morning.
- Whisk eggs, salt, pepper and milk in mixing bowl until combined.
- Grease 9 x13 baking dish with softened butter.
- Spread English muffin cubes in the pan and drizzle with melted butter.
- Layer with sausage, cheese and then red bell pepper.
- Pour egg mixture over the layers, being sure to evenly distribute.
- Refrigerate overnight.
- Let sit at room temperature for 30 minutes prior to baking.
- Bake uncovered at 350° for 1 hour or until a toothpick comes out clean.
- Let the dish rest at room temperature for 15-20 minutes prior to serving (this is crucial in order to let the eggs set, if you serve it too soon, the texture will be loose). Sprinkle with chives prior to serving.
