Mexican Style Chicken Tacos

I love tacos…I mean LOVE. I think I could eat them every day of the week. The shredded chicken that I make for these Mexican Style Chicken Tacos is full of flavor, juicy and never dry. It is very forgiving if accidentally overcooked because the juices, olive oil, and seasonings from the chicken are drizzled over the meat once it shredded. My favorite way to enjoy these is “Mexican Style”…meat, diced raw onion and chopped cilantro on a soft corn tortilla. I also like to add a smear of sour cream and a drizzle of hot sauce for a combination that will knock your taste buds off!
Ingredients
- 5 boneless skinless chicken breasts
- ⅓ c. olive oil
- 1 tbsp. salt
- 1 ½ tsp. chili powder
- 1 ½ tsp. ground cumin
- ¼ tsp. garlic powder
- one onion, finely diced
- one bunch cilantro, chopped
- soft corn tortillas
- sour cream, for topping
- hot sauce, for topping

Instructions
- Preheat oven to 375°.
- Combine salt, chili powder, cumin, and garlic powder.
- Place chicken breasts in large pan, leaving a little room in between each one so that they are not touching.
- Drizzle olive oil over chicken breasts and sprinkle with seasoning mixture (this will seem like a lot of seasoning, but please trust me…once the chicken is shredded it is the perfect amount to coat all of the chicken).
- Bake for 30-40 minutes until the chicken is cooked through and no longer pink (this will vary greatly depending on your oven, cut into the chicken after about 25 minutes to see if how it’s coming along).
- Once the chicken is cooked through, let it stand for 10-15 minutes or until it is comfortable to handle, making sure to reserve the juices in the pan.
- Cut each breast into 3-4 pieces and pull it apart (you can use two forks, but I prefer using my hands if it’s comfortable to handle).
- Drizzle the shredded chicken with the juices and seasonings from the pan.
- Heat the tortillas by brushing them with olive oil and browning each side until they are golden in color.
- Top each tortilla with a little sour cream, some shredded chicken, onion, cilantro, and a few dashes of hot sauce. YUM!!!!
