Creamy White Chili
I have tried a lot of white chili recipes that just didn't do it for me. Sometimes they can tend to turn out an off color. Other recipes just don't have the flavor or kick that compares to a traditional chili. This one, I promise, is packed with flavor and creamy goodness. My Dad makes a soup similar to this with noodles and ground wild turkey. This is my version as a traditional white chicken chili with shredded meat and all the fixins'. It is quick and easy, but no one would ever know!
Ingredients
- 2 ½ c. cooked shredded chicken
- 2 cans (15.5 oz. each) great northern beans, drained and rinsed
- 2 cans (4 oz. each) chopped green chiles, juice and all
- 2 c. chicken broth
- 1 tbsp. olive oil
- 1 medium onion, diced
- 1 tsp. cumin
- 1 tsp. dried oregano
- 1 ½ tsp. garlic powder
- ½ tsp. black pepper
- ¼ tsp. ground cayenne pepper
- 1 ½ tsp. salt
- 1 c. sour cream
- 1 c. heavy whipping cream
- 1 c. 2% milk
Toppings
- blue corn chips
- freshly shredded white cheddar cheese
- sprig of cilantro for garnish (optional)
Instructions
- Heat olive oil in a large soup pot over medium high heat. When oil is hot and fluid, add onion. Reduce heat to medium low and cook until onion is slightly translucent.
- Add the salt, black pepper, cumin, garlic powder and oregano. Stir and cook for 30 seconds to wake up the spices.
- Add the broth, chiles, beans and shredded meat. Bring to a boil. Reduce heat and simmer, uncovered for 30 minutes.
- Turn off heat and add the sour cream, heavy cream, milk and cayenne. Stir until well incorporated. If the mixture is not hot, heat on medium low until heated through, but do not boil.
- When ready to serve, top each bowl with blue tortilla chips and shredded white cheddar cheese (see note).
Notes
- For the shredded cheese, buy a block and shred it yourself. The pre-shredded kind has mold inhibitors that can affect the texture and taste. You will have the creamiest, tastiest experience with a block that you shred yourself.
- A rotisserie chicken is a great way to save time with this recipe!
- Cooked shredded turkey can be a substitute for the chicken. I've made this recipe with shredded wild turkey that I had leftover in the freezer, it turned out awesome!
