Mama’s Pumpkin Bars

There is something about the fall in Wisconsin.  The crisp air, the autumn leaves letting go…and the comfort of a warm dessert that feeds both belly and soul.  Is there anything better than walking into the house on a fall day with the delicious aromas of cinnamon and pumpkin permeating the air?   Once fall peeks it’s head around the corner we can find just about anything that is flavored with pumpkin spice ….but this recipe brings a person back to the simplicity and perfection of the fall delicacy that we all love so much.  I hope this recipe adds a little light and warmth to your day today…the way it did when my Mom made it for me:)

Ingredients

Bars:

  • 2 c. unbleached all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tsp. ground cinnamon
  • 1 c. sugar
  • 15 oz. can pumpkin puree
  • 4 eggs
  • 1 c. vegetable oil

Frosting:

  • ½ c. salted butter
  • 8 oz. cream cheese (softened)
  • 3 c. powdered sugar
  • 1 tsp. vanilla extract

Instructions

  1. Combine dry ingredients (flour, baking powder, baking soda, salt, cinnamon), set aside.
  2. In a separate bowl, mix sugar, oil, eggs, and pumpkin on low speed.
  3. Gradually add the dry ingredients.
  4. Pour batter into a greased 10×15 pan
  5. Bake at 350° for 25-28 minutes (test with toothpick to ensure batter is cooked through, cooking time will vary with each oven).
  6. While bars are cooling, combine frosting ingredients (start on low speed and increase to high, beat until fluffy).  Spread onto bars once they are fully cooled.
