Barb's Dressing

This is a recipe handed down to us from church friends. We were at their house for supper one night and I could not get enough of the spring greens because they were smothered with this amazing, delicious dressing. I don't even like spring greens!!!! Ha ha!!! They shared the recipe with us which was shared with them from a woman at church. I jotted it down and still have it in my binder of recipes, titled "Barb's Dressing." I do not know Barb, but her dressing has been a part of our life since we first started our family. So Barb...thank you for your amazing talent in the kitchen, because of you I have been getting plenty of my greens over the years;)

Ingredients

  • ¼ c. fresh squeezed lemon juice
  • ¼ c. organic cane sugar
  • c. grapeseed oil
  • 1 tsp. Dijon mustard
  • 1 tbsp. finely diced onion
  • dash salt

Instructions

  • Combine ingredients in a bowl and whisk vigorously until fully incorporated.

Notes

  • Serve over your favorite greens or salad. My favorite way to enjoy this dressing is over salad/greens topped with Feta cheese! Fresh cracked pepper is a great addition too.
  • Barb's recipe called for vegetable oil and granulated sugar, I substituted with organic cane sugar and grape seed oil.
