Mediterranean Dip
This is a fresh, comforting dip that everyone always LOVES and it only takes a minute to throw together! It inspired by a recipe that was passed along to me at a work potluck years ago. I make my own Greek Vinegarette which is super delicious and easier than one would think to mix up! It makes a great appetizer for any gathering, especially in the summertime when you may have tomatoes or cucumbers to use up from your garden.
Ingredients
- 16 oz. cream cheese
- ⅓ c. finely diced red onion
- ½ c. finely diced cucumber (scrape out seeds before dicing)
- ½ c. finely diced tomato (scrape out seeds before dicing)
- 4 oz. Feta cheese
- thin wheat crackers, for serving
Dressing
- ¼ c. red wine vinegar
- ½ c. avocado oil
- 1 ½ tsp. salt
- 2 tsp. sugar
- 2 tsp. Greek seasoning (no salt)
- 1 oz. Feta cheese
- 1 tbsp. diced white onion
- ¼ c. chopped cucumber
- 1 garlic clove
Instructions
- Add the dressing ingredients to a blender, giving it a few longer pulses, until thoroughly combined and emulsified.
- Mix dressing and chopped vegetables in a bowl and if you have time, let the mixture marinate for a couple of hours.
- Spread cream cheese in an even layer on a serving tray.
- Top with vegetable mixture. Crumble Feta cheese on top.
- Serve with thin wheat crackers.
Notes
- I highly recommend making the homemade dressing, but if you're in a pinch, ¾ c. store-bought Greek Vinegarette dressing works great!
