This is a fresh, comforting dip that everyone always LOVES and it only takes a minute to throw together! The recipe found its way into my recipe binder through a work potluck, where it continues to charm everyone who tastes it. I wanted to make it for an upcoming gathering with friends and couldn't locate the recipe. So, I tried my best to remember and made sure to write down my measurements. Now I'm thrilled to pass it along to you!
Ingredients
16 oz.cream cheese
¾c.Greek Vinaigrette salad dressing
⅓c.finely diced red onion
½c.finely diced cucumber (scrape out seeds before dicing)
½c.finely diced tomato (scrape out seeds before dicing)
4oz.Feta Cheese
thin wheat crackers, for serving
Instructions
Combine Greek Vinaigrette and chopped vegetables in a bowl and let marinate for a few hours (or overnight).
Spread cream cheese in an even layer on a serving tray.
Top with vegetable mixture. Crumble Feta Cheese on top.
Serve with thin wheat crackers.
Notes
Wheat Thins and Kraft Greek Vinaigrette are what the recipe originally call for, although comparable products make a fine substitute!
