Our family made these one night for family movie night and they were a hit all the way around! I love to make "take-out" at home, because you can choose your own ingredients...which usually results in a tastier, healthier version! We like these for family movie nights, because #1 they are delicious and #2 they are easy to eat while sitting one's bum on the couch (the ingredients are all wrapped up and no mess)! So next Friday night, treat yourself to some R & R, and enjoy every bite!
Ingredients
2 lb.ground beef
2packetstaco seasoning
10burrito grande size tortillas
1c.chili con queso (cheese dip)
8tostada shells
lettuce shreds
shredded cheese
diced tomatoes
sour cream
cooking spray
hot sauce (optional)
Instructions
Brown ground beef in skillet until no longer pink; drain grease.
Add taco seasoning and 1 ½ c. of water. Simmer until thickened.
Cut 2 of the tortillas into 6 wedges (you should have 12 total, but you will only need 10). The other 2 can be used for leftovers.
Now it is time to assemble your Taco Wrap Supremes using the remaining 8 whole tortillas.
In the center of a whole torilla, layer ½ c. beef and top with 2 tbsp. chili con queso cheese sauce. Top with a tostada shell. Then on top of the tostada shell, layer ½ c. lettuce, 1 tbsp. tomatoes, 2 tbsp. shredded cheese, and a few dollops of sour cream. Place one tortilla wedge on top.
Fold whole tortilla edges up and over the ingredients, meeting edges in center as tightly as possible.
Spray griddle with non-stick cooking spray and heat to medium high (375°). Place 2-4 wraps at a time on the griddle seam-sides down and cook until golden on each side. Repeat with remaining wraps. Serve with hot sauce, if desired.
Notes
I like to use Ortega taco seasoning because it thickens up nicely. You don't want runny taco meat for this recipe!
I like the La Banderita tortillas because they are always very soft and pliable which helps for the unique folding that is required.
You could easily reduce this recipe and cut it in half, but we found that some of us wanted 2 Taco Wrap Supremes, so it was nice to have extra.
